Carinderia Crawl E8: Pork sisig at Ilar’s Tapsilog in Manila

It was a hot day and the last thing we wanted for lunch was a sizzling meal. But Peter Den Mar Torres, 20, a volleyball player who helped National University earn its two-peat UAAP championship title, wanted his pork sisig fix. As a varsity player at NU, Torres’ meals inside the campus are free, and so he rarely eats outside. When he does, he is never choosy and in fact likes to try out different eateries and restaurants.

On this installment of Carinderia Crawl, he takes us to Ilar’s Tapsilog and orders their best-seller: pork sisig. The eatery can be easily spotted on MF Jhocon Street — named after NU founder Mariano Fortunato Jhocson — because of its big space and bright pink walls. It doesn’t feel like you’re in a carinderia, but for the cheap meals and many food choices.
 

WHAT HE HAD: Pork sisig meal for 70 pesos.

WHAT HE THINKS: Torres liked Ilar’s sisig because he could distinguish the complementing flavors that went into the dish: sweet mayonnaise, spicy chili and tart calamansi. The sisig, he says, was not too oily and the plate was hot enough for him to cook his egg well done. Sweat was dripping down Torres’ forehead while he was eating, because he added chili to the sizzling hot dish. It’s worth it, he said, because he really loved the sisig.

WORDS OF WISDOM: “Sa volleyball kailangan synchronized lahat, kaya nga team sport. Hindi mo iniisip ang sarili mo, lagi ang grupo at ang mga kakampi mo. Ang magandang natutunan ko dito ay ‘yung tulungan.”

  1. i have my own version of sisig, cooked 3-4 times. first, the pork head is cooked in water to be tenderized, second, the pork is either roasted in a turbo broiler or over coal to let the fat drip, after chopping it finely, it will be cooked for the third time, this time it is sauteed in butter with garlic, onion, chili and ginger, it will be seasoned with salt and pepper and finished off with liver spread, it can be served right away of for a more authentic presentation, it will be cooked for the fourth time on a sizzling plate and topped with a raw egg.
