On this episode of Carinderia Crawl, we hang out with photographer Erik Liongoren at a 24/7 all-day breakfast place in Barrio Kapitolyo, Pasig City. The place is unique: located in a converted garage, everything on the menu is under PHP100, a steal especially for Western-style meals like Eggs Benedict (PHP85), French toasts and pancakes (PHP80) which would normally cost double in other restaurants.
The kitchen has an inventive and playful approach to old-time Pinoy favorites. This morning, Erik orders a plate of tuyo (dried salted fish) served with scrambled eggs, grilled tomatoes, kesong puti (white cheese) and basil pesto sauce; followed by mixed berries pancake.
WHAT ERIC ATE: Tuyo with scrambled eggs, tomatoes, quesong puti and basil pesto sauce (PHP90) and mixed berries pancake (PHP90).
WHAT ERIC THINKS: He liked the idea of having quesong puti with tuyo because he feels it would neutralize the saltiness of the fish and give it a different texture. “The dominant flavor of the dried fish is salty, but the cheese and basil pesto lift it up,” he says. As for the three layers of homemade pancake? He only has one thing to say about it: “Champion!”
