Carinderia Crawl E20: Bagnet-themed dishes at Bagneto

Bagnet lovers out there will enjoy this start-up stall on Malingap Street in Quezon City that serves up different bagnet-themed dishes.

Located inside the Z food incubator compound, Bagneto opened two months ago and offers bagnet meals originally blended by owner Raz Resuena. Your choices: bagnet kare-kare, bagnet sisig, bagnet Bicol express or basic Bagnet with rice.

According to Resuena, he decided to make an all-bagnet food house because he really loves this Ilocos dish. Back during his college days at De La Salle University, he used to hang out in a small place near their campus where he ordered bagnet almost everyday.

“I am from Bicol and I don’t have any prior experience with culinary arts, I just love eating bagnet,” he admits. “I just learned cooking it through the help of my friends who are chefs.”

During the time when Resuena was conceptualizing for the name of his business, the film X-Men was really popular. So he thought that combining the word “bagnet” with the Marvel character “Magneto” would be appealing and fun. “Fan kasi ako ng X-Men at ni Magneto, so why not ipagsama na lang ‘yung dalawa para catchy ‘yung pangalan.”

On this episode of Carinderia Crawl, visual artist Francis Perez tries bagnet kare-kare and the original bagnet at Bagneto.

The presentation of the dish makes a good first impression. The rice is shaped like a volcano and the kare-kare is placed inside the crater. He likes the kare-kare because it’s freshly cooked and the peanut flavor is strong. He also commends the restaurant’s originality because it’s his first time tasting kare-kare with bagnet meat. 

But he enjoyed the basic bagnet dish more: it is not oily and the meat is thinly cut and chewy. It came with two choices for dips: authentic vinegar from Ilocos and a sweet gravy. According to Francis, he prefers the vinegar because he feels like he is not in Manila but in the province of Ilocos eating its popular dish.

FRANCIS’ SAY: Bagnet in Bagneto is cheap compared to other places in Metro Manila. He says that the meat is soft and the flavor is really rich. The skin of the bagnet is really crunchy while the meat is very tender. He also thinks that the meals in Bagneto are very creative and he would definitely go back and invite friends to dine there.

WORDS OF WISDOM: “Masarap kapag pinaghihirapan ‘yung mga bagay, lalo na kapag binubuo mo ‘yung pangalan mo. Dapat sumali lang sa mga (art) events, laging gumawa at magtiyaga.”
