In this all-glass structure kept at a constant 18-degrees, the multi-awarded chef Tweet creates dreamy edible sculptures in the shape of the Eiffel Tower (a nod to Sofitel’s French heritage), handbags and, for the manly types, tools like wrenches and pliers.
There also trufflees, chocolate bars and pralines, sugar candies made from nuts and sugar syrup. On this episode of Instakitchen Manila, chef Tweet shows us how to make peanut pralines, white chocolate candies filled with nuts roasted with confectioner’s sugar.
