If you’ve been brainwashed to think that fried and roasted chicken is meant to be eaten with gravy and gravy alone, the clean and light taste of Argentinian chimichuri dipping sauce that will clear your mind. Originating from Argentina, it’s made up of finely chopped parsley, minced garlic, olive oil and oregano, among others.
“Latin flavors are a bit more citrusy and lighter,” explains Katrina Padilla, manager at Señor Pollo in Quezon City. “Our chicken is juicy. It has been marinated overnight. You can taste Latin America in it with the spices we baste it with, like paprika and cumin. We roast it with charcoal which gives it an extra smokiness.”
