My Kitchen by Chef Chris is one of those rare restaurants in Metro Manila that you could still consider a “find”.
Tucked away in a hotel across Paco Park, chef Chris Locher’s Italian restaurant has been around for years and has its stable of loyal followers who come here for both the food and ambiance — and the chef’s big personality.
Born in Switzerland but based in the Philippines since 1993 (he came here for a cooking gig at the Asian Developmet Bank), Locher used to be the executive chef at Yats Wine Club in Clark, Pampanga, until he moved to C’ Italian Dining, also in Pampanga, where he created the panizza, an ultra-thin crust pizza that has since been copied by other restaurants.
He now works with Aura Hotels and Resorts, the owner of My Kitchen by Chef Chris, as consultant executive chef.
On this episode, Locher shows us how to make two pasta dishes: spaghetti verena, a refreshing dish flavored by salmon and vegetables and suitable for the aglio olio fans; and the penne salsiccia, “a truly manly pasta” that has tomatoes and sausage balls.
