‘Fatty and funky’ Filipino cuisine in 2015 food trends

Dear bagoong, are you ready for your close up?

“If last year was the rise of Latin America, apparently, 2015 will see us all gain a new found appreciation for Filipino food,” writes finedininglovers.com, a fine dining magazine for foodies by S.Pellegrino & Acqua Panna.

The report quotes Kara Nielsen, culinary director at the advertising agency Sterling Rice Group, who gave her prediction for next year’s top 10 food trends in October. 

“From Filipino food to a new generation of Thai, not one but a host of more complex and true-to-region Asian foods will dominate in 2015,” according to the Sterling Rice Group’s press release.

Nielsen says food trends in 2015 will be a result of “deeper explorations of ethnic cuisines, exotic ingredients and new cooking methods along with a concurrent emphasis on local and fresh,” reports Jon Springer on supermarketnews.com. “In grocery stores, this trend could emerge in the condiment aisles and in frozen foods.” 

What can Philippine cuisine bring to the global table? A flavor profile described as “fattier and funkier”.

Other top food trends for next year include Japanese matcha tea, a powder form of green tea; coconut sugar, a healthier sugar alternative; and kalettes, a hybrid vegetable comprised of brussel sprouts and kale.
