Dedet de la Fuente of Pepita’s Lechon will be whipping up Independence Day feasts at Diamond Hotel

We think Dedet de la Fuente, of Pepita’s Lechon is a genius. We mean, hello. She thought of stuffing lechon with truffle rice, among other equally good things. Dousing cotton candy with lambanog to be served as a starter and letting shrimps swim in salted egg reduction? Those also came from her imaginative brain. Thankfully, she’s a top chef who can beautifully execute her wild culinary ideas into reality.

Experiencing Pepita’s Degustacion in her private kitchen in Makati is something we feel everyone should try at least once in their lives — a hyperbole, sure but one that comes from an honest place.

It’s that good, but also one that difficult to book. So, we encourage you to try and catch Dedet at Diamond Hotel, where she’ll be whipping up special lunch and dinner buffet to celebrate Independence day.

Dedet’s Diamond run will start on Wednesday lunch, June 3 and will go on until June 14. Featured in the buffet are her specialities: her stuffed lechon with truffle rice, another stuffed lechon but this time with binagoongan rice, plus several other Filipino dishes.

We’re hoping the Hiplog, which is the shrimps swimming in salted egg reduction, as well as the Sipit Sarap, which crab in talangka fat, and her super suman will make it to the buffet. Actually, we’re hoping for her entire Hayup na Degustacion menu will be part of either the lunch (PHP2,150) or dinner (PHP2,550) buffet. Or if we’re being really, really honest, we’re hoping dishes that make her “Breakfast at Tiffany’s” Degustacion will also be featured at Diamond, too.
