First, naming your restaurant Fat these days — with healthy eating still trending — is an act of bravery. So here’s a ceremonial hat tip to you, chef Kel, he who is the genius behind Kapitolyo favorite, Locavore.
It opened over the weekend at Bonifacio Global City, and according to Pamela Cortez of Pepper.ph, at chef Kel’s new venture “fat is everything but the enemy…from start to finish, Fat is strong. There are a few stumbles, but minor and forgivable.”
Chef Kel displays his background on French cuisine here, using fat and all its versions to clever use. “it is the technique in the dishes that brings out the maximum flavor of fat, without ever feeling greasy, heavy, or overbearing,” Cortez continues.
For her Fat feature on Pepper, she sampled 14 dishes. Of all of them, “two mains were instant classics,” she calls them: Salmon Carbonara that came with an egg, and the Korean Beef stew.
Her story, along with these photos posted on Fat’s Facebook page make us want to go there pronto! Alas, Fat is only open for dinner service.
