Top dessert chef Dominique Ansel uses calamansi for fruity treat

It looks like famed dessert chef Dominique Ansel — the creator of the cronut — has gotten some culinary inspiration from calamansi.

Filipino chef Margarita “Gaita” Fores dropped by the Dominique Ansel Kitchen in New York and saw that calamansi is one of the main ingredient in one of Ansel’s latest offerings.

Fores took an Instagram photo of several tubs of fresh juiced pâte de fruits. One flavor combination was carrot and calamansi.

Pâte de fruits (fruit paste) is made by by boiling fruit puree with sugar and pectin to result in a tasty treat.

Fores wrote this caption for the photo: “Look who is using our CALAMANSI! @dominiqueansel thank you! #pinoypride #philippines #filipinocuisine.”
