US mag Bon Appétit features chicken adobo in ‘Greatest Recipe’ series

Adobo is just a regular thing in most Filipino homes, but the rest of the world can’t seem to stop writing poetry about the country’s unofficial dish. 

Food and lifestyle magazine Bon Appétit included the vinegary, garlicky staple in its “Greastest Recipe of all time” series, featuring well-loved recipes from around the world. Hummus, challah, and Korean braised beef are some examples of dishes that have also made it to the list. 

Bon Appétit assistant food editor Amelia Rampe said that it was her favorite dish growing up. She said that whenever they had adobo at home she would always “go back for extra rice and adobo broth.”

“I think it’s probably every Filipino kid’s first food love,” she wrote.

Rampe said that her dad’s recipe “uses the whole chicken and it’s brothier, with equal parts soy and vinegar and with onion instead of garlic.”

“No matter how you’ve prepared your adobo, there’s really no messing it up. That amazing fusion of soy, vinegar, garlic, and pepper in every version is a winning formula,” she wrote. 

It may also be recalled that domestic goddess Nigella Lawson also raved about adobo during her quick stay in the country.
