Carinderia Crawl E14: Special bulalo at Bulaluhan sa España

On this episode of Carinderia Crawl, we hang out with landscape photographer Paul Quiambao, 23, at an eatery on España Boulevard in Sampaloc, Manila, known for its bulalo—clear hot soup with beef shanks as main ingredient, though the star of bulalo is always the bone marrow. The “special” version of this dish comes with corn and bok choi. 

Bulaluhan sa España is one of the most popular spots in Metro Manila for bulalo.

As he digs into the dish, Paul tells us about one of his most unforgettable experiences as a landscape photographer: he went backpacking in Batanes and was battered by powerful waves while taking pictures. “Whenever I got scared, I looked at the light and everything became calm,” he tells us.

The best part of eating bulalo—and which one should never miss doing, says Paul—is sucking the bone marrow. “For me the bone marrow tastes better than the meat,” he says.
